I love to cook. Well, actually, I love to bake.  I cook cause I have to.

When I’m in a kitchen with actual counter space, I cook a lot. Mainly southern comfort foods… my grandma taught me how to fry like no one’s business. Still, I don’t fry a lot. It makes the house smell like grease and my waistline expand.  My husband’s love is barbeque/grilling and Mexican food, and mine is Italian.

Since last night I made this dish, I thought I would share. It’s super simple and it’s totally made up. It’s a version of something my roommate did in college and I’ve always loved it. I adjust it a bit each time, but I love making this so I thought you might like to make it too. It’s made with a lot of pre-packaged ingredients which makes it super easy.

Spinach Stuffed Shells

large shells for stuffing (about 1/2 a box)
1 egg (beaten)
1 package of frozen spinach (I buy the box)
1 package Ricotta cheese (16 oz)
1 package italian blend cheese
1 jar pasta sauce*
*Now, I use a homemade red sauce that is AMAZING and I will gladly share soon! But before I discovered the deliciousness that is called “Donna’s Red Gravy,” I used either a can of Prego or an alfredo (depends on how ‘bad’ you want to be. 😉

First, I get my water boiling in a large pot and add the shells.  While they are cooking, remove as much water from the spinach as possible.  I usually blot it up with a towel. Mix the spinach, ricotta cheese, about 1/2 of the italian blend cheese, egg, and seasonings together. After the shells are al Dente, open the shells and stuff ’em!

I place a little bit of sauce on the bottom of my dish.  (This dish usually fills a 2 quart casserole dish. Sometimes a 9 x 13. It depends on how many shells you use. Then I place my shells along the bottom and pour the sauce over them. Top it off with the rest of the cheese and bake at 350* for 30 minutes or until all hot and bubbly.


It has spinach so that means it's healthy, right? 😉

Super easy. I did this last night after working in the yard all afternoon and the baby in the high chair. If it wasn’t easy, I would have ordered takeout. 🙂
